http://flickr.com/photos/22528194@N05/2193290744/in/photostream/ (btw, Tequila is distilled pulque; pulque is fermented aguamiel; aquamiel is the liquid the agave produces to form its inflorescence, which I think is ~3% sugars. The syrup is is just this aguamiel boiled down to about 60% sugar. It's good, you can buy it at Berkeley Bowl. The only problem is that you can get aguamiel from species of agaves, and prices are so high that it is putting pressure on some wild populations [A. tequilana is by definition cultivated]. Harvesting the aguamiel obviously prevents flowering). Add Comment
